      Panko is king: Panko breadcrumbs give extra crunch compared to regular breadcrumbs. Use them if you can find them.

      Don't crowd the pan: Frying too many strips at once drops the oil temperature and leads to soggy, greasy tenders instead of crispy ones.

      Rest on a wire rack: Place fried tenders on a wire rack over a sheet pan instead of paper towels. This keeps the bottom crispy instead of steaming.
