        Curry roux boxes are the shortcut: S&B Golden Curry or Vermont Curry are both excellent. They come in mild, medium, and hot — choose your level or mix two boxes for a custom blend.

        Grated apple: The grated apple adds a natural sweetness and body to the sauce. It melts into the curry as it simmers — you won't taste "apple" but you'll miss it if it's gone.

        Even better the next day: Japanese curry deepens in flavour overnight. Make a big batch and reheat the next day for the best results.

        Freezing tip: Remove the potatoes before freezing — they get grainy when thawed. The curry itself freezes beautifully for up to 3 months.
